Chicken and chicken essence with black fungus and "kiss kiss veg" (金针菜) by 黄靖雯‎


Ingredients:1. 600-700g mix of chicken wings and chicken breast (can be chicken thigh, up to your preference) wash and cut into bite sized
2. 5-6 pieces shiitake mushrooms (花菇) soaked in water till soft, remove stalk and sliced
3. 1 cup black fungus (either dried fungus or fresh fungus) soak and wash, trimmed and cut into smaller pieces
4. 40-50g dried lily flowers 金针菜 tied into knot (usually I tied two together), remove hard stem, soak and wash
5. 5-8 slices of ginger
6. 5-6 big red dates cut into small pieces
7. A handful of wolf berries
8. Spring onion for garnish
9. Chinese sausages (optional, if u like u can put)

Seasoning for marinate:1. 2 tbsp light soya sauce
2. 2 tbsp shao xing hua tiao wine (Chinese cooking wine)
3. 2 tbsp oyster sauce
4. 1 tbsp sesame oil
5. Pinch of pepper, salt and sugar

Method
1. Put chicken, ginger and seasonings in a big bowl and marinate at least 4hour in the fridge. Best is overnight in the fridge.
2. Put lily flowers and black fungus at bottom of a big bowl or plate. Put marinated chicken with sauce and ginger. Put all other ingredients.
3. Pour one bottle of essence of chicken (I used brands essence of chicken)
4. Steam over medium-high heat for 30-35min or till chicken is cooked.
4. Garnish with spring onion
TaDa!! Enjoy

This dish can reheat the next day and still as good and yummy!! If you don't want to steam it, you can pour all into a pot and simmer it over low heat.
