Honey BBQ Bacon by Ginny Chan



Ingredients
1 kg back bacon
60g garlics

Marinade
4 tbsp (approx 150g) honey
200g sugar
3 tbsp light soya sauce
1 tbsp sesame oil
2 tbsp fish sauce
1/2 tsp salt
1 tbsp oyster sauce
250ml water
A bit of char siew color (optional)

Method
1) Bruise whole garlics and remove skins.
2) Mix all (except sesame oil) marinade ingredients together and microwave till sugar is melted
3) Put in the garlics and leave mixture to cool. Add sesame oil
4) Place bacon & marinade in an airtight container (bacon should be submerged in the marinade) and marinade for at least 2 days before grilling.
5) Grill bacons on an aluminum lined baking sheet to done.
Note:
1) You may have to adjust the marinade ingredients depending on how salty your bacon is originally.
2) Do not use chopped/minced garlics as these may burn during grilling.
3) Grilling is faster and gives a better result but bacon burnts faster.
4) Alternatively, bake them at 200 deg C for about 10 minutes turning them once midway.
5) Bacon will char at the ends, so trim off ends before serving/storing.
6) Use good quality bacon for this as there will be less water exuded during the grilling process. I use Oscar Mayer brand.
