Cucumber And Carrot Pickle
Ingredients
1 Cucumber, halved, seeded and thinly sliced
1 Carrot, peeled, halved and thinly sliced
1 Red Chili, seeded and thinly sliced
1 Green Chili, seeded and thinly sliced
2 Shallots, peeled and thinly sliced
Dressing
½ Cup Vinegar
½ Cup Sugar
¼ Cup Water
1 tsp Sea Salt
Method
Mix the dressing ingredients and bring it to a boil. Set aside to room temperature.
Place sliced cucumber, carrot, shallots and chilies in a mixing bowl. Mix the dressing over the cucumber mixture. Chill for 20 minutes before serving.
