Chicken Chop by Evian Lim


Sauce enough for 4pax :1) Boil 150ml of water
2) water boiling, add 1big tablespoon of mash potato and stir till dissolve
3) add 1teaspoon of black pepper powder, 1tablespoon oyster sauce and some dark soya for color, stir till dissolve
4) add 150ml of fresh milk, stir till boil
5) add corn flour slurry to thicken
6) remove sauce from stove, add 1 slice of butter 1cm thick, stir till dissolve.
It's done!



Seasoning of 5 boneless chicken thigh :1) 3tablespoon of 绍兴酒 (Chinese Yellow Wine)
2) 1tablespoon of light soya sauce (do not use dark sauce as it turn black when pan fry)
3) some sesame oil and pepper
Season chicken thigh for 2hours.
