Slow Cooker BBQ Ribs with Roasted Strawberry BBQ Sauce
BBQ ribs has to be one of my favourite things about summer and I have just been itching to try cooking them in the slow cooker! Getting perfectly cooked, juicy, fall off the bone tender ribs can sometimes be tricky but the slow cooker makes it almost effortless! With the slow cooker you just need to season the ribs, place them in the slow cooker with the ribs vertical, wrapped around the inside, pour on the BBQ sauce and cook on low until nice and tender, about 6-8 hours. Once the ribs are cooked you can slather on more BBQ sauce and throw them onto the grill (or under the broiler) to get that smoky grilled flavour! Speaking of sauce, for these ribs I went with my roasted strawberry BBQ sauce which is perfect for the summer!

Grilling season is here so dust off your barbecue, fire it up and get your grill on! Whether you are cooking for family or friends the warmer weather provides the perfect opportunity to move things outdoors, and who doesn't love to cook under open blue skies with fire! It is easy to cook an entire meal on the grill with everything from mains like juicy steaks, meat on a stick, burgers and sandwiches to sides like grilled vegetables and even onto dessert with grilled fruits. Moussaka Burgers

Moussaka Burgers

With the long weekend coming up I have been thinking about grilling and in particular about these moussaka burgers. Moussaka is a tasty Mediterranean dish that is typically made with layers of eggplant, meat, a tomato sauce and a cheese bechamel sauce and I have been wanting to try making burgers with these flavours for a while now. I started the burgers off by making a tomato sauce with the hints of cinnamon and allspice that moussaka often has and then I moved on to make a simple bechamel sauce with plenty of melted melted cheese. Up next were the patties which I kept nice and simple, once again seasoning with hints of cinnamon and allspice, and the last component was slices of eggplant that I grilled along with the patties.

All said and done these burgers are amazingly good and they definitely taste like moussaka, only better! These burgers take a bit of time to make but you can easily make the sauces and patties a day ahead and then just warm the sauces and grill the patties and eggplant of the day of your get together with minimal effort. I served the moussaka burgers with a fresh Greek salad.

Grilled Jerk Shrimp and Pineapple Skewers
Up next in my summer grilling adventures I head down south to the Caribbean for some grilled Jamaican jerk shrimp using a tasty homemade jerk marinade. Jamaican jerk spice comes in the form of a spice blend a paste or a marinade and its main ingredients are allspice, scotch bonnet peppers, green onions, thyme, nutmeg and garlic. I like to make my own jerk marinate from scratch and although the list of ingredients may be long it is super simple to make and you should have most of the ingredients in your pantry already. This jerk shrimp is as easy to make as marinating the shrimp in the jerk marinade, skewering it and grilling it! Jerk spice is typically on the spicy side so I like to serve it with fresh fruits or salsas, especially in the summer! The only thing that is better than fresh fruit is grilled fresh fruit so why not throw something like pineapple or peaches onto the skewer along with the shrimp for grilling? It is hard to beat grilled meat on a stick for summer entertaining but throw some fruit into the mix and you have to have one of the most perfect appetizers around!

Moroccan Grilled Chicken Kabobs

Up next in my summer grilling spree is some tasty chicken that is marinated in a Moroccan style spice blend. This Moroccan grilled chicken is as easy to make as marinating the chicken in lemon juice, olive oil and a blend of spices and then grilling it to perfection. The spice blend is made with a number of ingredients including a base of paprika with a touch of heat being provided by some cayenne and an hint of the exotic by the cinnamon, ginger and turmeric. Grilling the chicken only takes a few minutes so once you have it marinated you are only a few minutes always from tasty sticks of meat, almost like savoury lollipops really! This grilled chicken makes for great finger food at get-togethers and it also works well dinner.

Chipotle Lime Grilled Shrimp

I have really been into grilling this summer and one of my favourite things to grill has to be these chipotle lime grilled shrimp. They are so easy to make and so good that it is hard to resist grilling up a batch every week. The shrimp is marinated in a simple mixture of smoky and spicy chipotle chilies and sour lime juice along with a touch of garlic before quickly grilling it to perfection! Not only is this tasty chipotle lime grilled shrimp perfect for eating right off the stick but it is also fabulous to use in other dishes (see below). This recipe is my go-to version that I usually use but I also like to change things up every once in a while and some great options are adding a touch of honey, tequila or cilantro. No matter how you grill this chipotle lime shrimp up this summer it is sure to please, and disappear quickly, so make a double batch!

With summer here it is grilling season and one of my favourite things to grill is meat on a stick! I mean, what's not to like? You have meat, sticks and fire! Mmm... Although I generally think of chicken first when it comes to meat on a stick, you can't go wrong with plump juicy shrimp either! I came across the idea of pesto grilled shrimp on Gina's Skinny Taste a few months ago and I was just itching for summer to arrive so that I could use some fresh basil, fire up the grill and try them out! The recipe could not be easier, you simply make the pesto, marinate the shrimp, skewer is on sticks and grill it and this is good since you will want to be making it every week this summer!

Speaking of grilling, after making the carne asada a few weeks ago I have been obsessing about it and I just had to make it again. The carne asada is flank steak that is marinated in a tasty Mexican style mojo with orange juice, lime juice, garlic, jalapeno and cilantro and then grilled until a perfect medium rare, or well done if you prefer. I used the last batch of carne asada that I made in a carne asada salad but I had been dreaming of carne asada tacos ever since. I hardly need an excuse to grill some steak so the carne asada tacos quickly made it to my meal plan! I kept things nice and easy to let the grilled steak shine and used a homemade pico de gallo along with some dice avocado and crumbled cotija to complete the tacos. It is always wondeerful to see such simple ingredients come together to make something so fantastically good! What a great way to enjoy some steak and to get outside and to use the grill!

Buffalo Chicken Burgers

With the warmer weather here I have been thinking about grilling more and burgers definitely come to mind! When I went over all of my burger recipes I noticed a glaring omission; where were the buffalo chicken burgers? I am a huge fan of all things buffalo chicken and it is always a treat to grill up some buffalo chicken burgers in the summer. I like to start my buffalo chicken burgers off by grinding some boneless and skinless chicken in the food processor to which I add some buffalo chicken flavours including carrots, celery, onions and blue cheese in addition to the buffalo hot sauce. In general I like to avoid fillers like egg and breadcrumbs in burgers which means that the patties are a little more delicate but as long as you flip them gently they still hold together quite well. Once the patties are assembled all that is left is to grill them until cooked and slightly charred before serving them up in a bun with your favourite condiments. For buffalo chicken burgers I like to keep the condiments simple and my faourite topping is a blue cheese slaw whether it be a cabbage slaw or as in this case a broccoli slaw. These tasty buffalo chicken burgers are all set to impress at your barbecues this summer!

Strawberry BBQ Chicken Club Sandwich with Bacon, Avocado and Goat Cheese

Armed with my shiny new roasted strawberry BBQ sauce I was ready to use it on something grilled! Before I had even made the strawberry BBQ sauce I was already thinking about using it in a grilled chicken club sandwich with lettuce, tomato and bacon in addition to the grilled chicken and the BBQ sauce. Even though the sandwich would be great just like that I really could not resist kicking it up a bit! I find that a creamy and tangy goat cheese tends to go really well with fruity sweet and spicy sauces like this strawberry BBQ sauce so I had to include some and a chicken club sandwich always benefits from some cool and creamy avocado! The flavours in this grilled chicken sandwich meld together magically and you will definitely be licking you fingers clean after eating one! With grilling season about to begin these strawberry BBQ chicken club sandwiches are a great way to kick things off this upcoming long weekend!

Roasted Strawberry BBQ Sauce

Grilling season is quickly approaching and I am getting ready by making some homemade BBQ sauces starting with this seasonal strawberry BBQ sauce. This strawberry BBQ sauce was inspired by the flavours in my strawberry and balsamic grilled chicken salad and my balsamic strawberry and chicken pizza with sweet onions and smoked bacon which predominantly feature the strawberry and balsamic vinegar flavours along with some Asian influences. I really wanted to be able to taste the strawberries in this BBQ sauce so that meant starting with a lot of strawberries and roasting them to concentrate their flavour. I like a BBQ sauce with a nice sweet side so for the sweetener I went with a combo of maple syrup and some homemade strawberry jam to add even more strawberry flavour. Up next was the balsamic vinegar for some tartness, soy sauce for the saltiness and a smoky and spicy chipotle chili in adobo. Continuing with the Asian influence I added plenty of garlic and ginger along with some BBQ sauce staples with a fresh cilantro finish. I have to say that this roasted strawberry BBQ sauce is addictively good! The strawberry flavours shine through and it has a really nice balance of sweet, spicy, tart and salty and lets not forget those sultry smoky undertones.

For my next batch I plan on adding bacon since both the salad and the pizza that inspired this dressing include bacon!

Carne Asada Salad

Normally I would tend to use a fresh batch of carne asada carne asada to make some carne asada tacos but since April is the National Salad Month it seemed only appropriate to make a carne asada salad. I mean you really cannot go wrong starting a salad off with some grilled medium-rare meat, right? I used lettuce for the base of the salad and then I build it out with some homemade pico de gallo, which contains all sorts of good things like tomatoes, onions, jalapeno peppers and cilantro, and then I continued with some creamy avocado and I finished the salad off with some black beans, corn and crumbled cotija. The only thing left to decide on was the dressing and what better to use for the dressing than the marinade that carne asada was marinated in? The carne asada marinade is a mojo style sauce with a base of sour orange, or a combo of orange and lime juice, and garlic and this one I season with jalapeno, cilantro, cumin and and oregano. All in all this is one really nice, refreshing, filling, tasty and healthy salad and a great way to enjoy some carne asada!

This salad work great with warm or room temperature carne asada so in the unlikely event that you have some leftover carne asada from some other use, this salad is a great way to enjoy it!

Carne Asada (Grilled Marinated Steak)

Next up in my exploration of Mexican meats is a classic that is perfect for the warming weather, carne asada or grilled steak. Carne asada can be as simple as grilling up a steak seasoned with salt and pepper or it can be marinated with a number of different marinades. Marinades for carne asada often contain lime juice which helps to tenderize the steak which is commonly a flank steak or a skirt steak. I like a mojo style marinade with a base or orange and lime juice that is seasoned with garlic, jalapeno, cilantro, cumin and oregano which, although simple makes for some really tasty steak! Carne asada is typically cooked well done but I prefer mine a nice moist and tender, medium-rare. Of course carne asada can be used in a number of dishes from tacos to fajitas to burritos to salads, etc.

Grilled Aubergine with Creamed Feta

I like eggplant and have liked it for a long time, but I don’t think I really got what eggplant is all about until a few years ago. I used to saute it or roast it or puree the cooked flesh, and ya, it was good. But, eggplant can be better than just good. The wonders of eggplant have been best described by Nigel Slater in Tender Vol. 1. If only that book had been available back when I first started cooking eggplant, I would have had a better understanding of the vegetable from the beginning. I highly recommend it for anyone in need of vegetable understanding or inspiration. First, he uses the term aubergine for eggplant which is so much prettier sounding, and I wish it would take off here in the States. Then, he fondly mentions the different varieties and their shapes, sizes, and colors. He writes of the ivory ones: “their pale skins blushed with lilac or rose as if someone had taken an artist’s brush to them.” He goes on to poetically discuss cooking aubergines: “The aubergine is at its most sensuous in a haze of olive oil and garlic, onion and sultanas, pine kernels, yoghurt and fresh mint. The fragrance is beguiling, sumptuous, heady. The flesh of Solanum melongena loves the muskier spices such as cumin and saffron, the piercing sharpness of pomegranate seeds, the faintest breath of rosewater. But nothing does quite so much for it as being grilled over charcoal. Smoke seeps into the spongy flesh, lending a note of intrigue and exposing an altogether darker undertone.” Now, that’s what eggplant is about. When a nice, big aubergine appeared in our CSA box, it was most certainly going to be cooked over charcoal.

There are eighteen recipes for aubergines in this section of the book, and every one of them sounds lovely. I was already determined to grill mine, and creamed feta sounded perfect with it. The aubergine was cut into thick slices which were sprinkled with salt and left to stand for up to an hour. Nigel does mention that salting isn’t really necessary to remove bitterness in the varieties of aubergine that are common these days, but salting does tighten up the surface of the cut pieces. After being salted, rinsed, and dried, the pieces absorb less oil. The slices were brushed with olive oil and then grilled for a few minutes per side until completely tender and just slightly charred in spots. The creamed feta was a mix of sheep’s yogurt, crumbled feta, and chopped parsley and mint. To serve, the grilled aubergine slices were drizzled with olive oil and topped with the creamed feta. I added a pinch or two of crushed red pepper for garnish.

By grilling over high heat, the texture of the slices was barely crisp and charred from the grates on the surface and completely yielding inside. A little smoky flavor is indeed a fabulous quality in an aubergine dish, and it paired well with the herby, tangy, savory creamed feta. Now, I’m wondering if I really know all the other vegetables out there as well as I should.

Clinched-and-Planked Shrimp

Seafood grilled on a plank is common enough, but have you tried clinching as a grilling technique? This is one of the many new ideas for cooking on the grill from Adam Perry Lang. I attended a class he taught recently at Central Market Cooking School with a media pass, and a copy of his new book Charred and Scruffed was included. He came up with the idea of clinching as a way of “closing the gap” between the burning coals and the food being grilled. By placing the food directly on the coals allowing no space between coals and meat, there’s no chance of flare ups from dripping fats. You get a very quick sear. Ordinarily, Kurt is the grill master at our house, but he wasn’t able to attend the class with me. So, I attended a class involving more red meat than I normally see in an entire year, just so I could pass all the information on to Kurt. Truth be told though, I was fascinated to learn more about cooking over direct flames and all the other great tips that were mentioned throughout the class. We were taught about “active grilling” which means the food is moved about the grill the entire time it cooks. That way, rather than worrying too much about grill marks, you can check for hot spots and be sure the food is cooking evenly. Basting was another important topic as was adding flavor at every point possible. So instead of using a silicon or natural bristle basting brush, one was made with herbs tied to the bottom of a wooden spoon. Then, the basting liquid itself and the herbs that form the brush add flavor at the same time. Throughout the active grilling time, each time meat was turned, it was immediately basted. The goals were to develop flavor while a nice crust formed as the meat cooked. One dish I probably won’t recreate at home, but maybe Kurt will, was the Rib Roast Done Like a Steak. With baseball bat in hand, Perry Lang bashed an entire rib roast of beef into a thick steak for grilling, and the class moved outside to watch the master at work in front of the grill. I’ve posted photos from the class on my Facebook page including one of the baseball bat maneuver.

In Charred and Scruffed, you’ll find all of the grilling tips and recipes for cooking every cut of beef as well as pork, chicken, lamb, duck, lobster, fish, shrimp, and game over coals. There are also brines, bastes, finishing salts, and side dishes. We tasted the Tomato Spackle, which is like an extra-thick homemade ketchup, during the cooking class, and there are recipes for an Artichoke Spackle and Hatch Chile Spackle in the book that I want to try too. First, I had to attempt something on the grill from the book. For the shrimp, layers of flavor were developed by starting with a brine. I made the basic brine which included water, salt, sugar, lemons, bay leaves, garlic cloves, thyme leaves, black peppercorns, and red pepper flakes. The brine was brought to a boil to dissolve the sugar, and then it was chilled in the refrigerator. The shrimp were cleaned, the shells were cut down the back so the shrimp could be deveined, but the shells were not removed. The shrimp spent an hour in the chilled brine before being cooked. Meanwhile, the plank was soaked in water. Another layer of flavor was developed by making a basting liquid with olive oil, butter, garlic, onion, oregano, salt, pepper, red pepper flakes, and lemon. After taking the shrimp out of the brine, they were tossed in the baste before being arranged on the soaked plank. The plank was placed directly on the hot coals in the bottom of the grill, and the water from the plank steamed as soon as the plank hit the coals. The lid of the grill went on, and the shrimp cooked in just a few minutes.

Despite the near-direct heat of the coals, the shrimp were well-protected by the plank and their own shells. They were probably the tenderest grilled shrimp I've ever tasted. And, there was great flavor from the brine and the baste along with the smokiness from the grill. I’ll be happy to coach Kurt when he feels like grilling red meat, and when I want to grill fish and fowl, I’ll be grabbing this book for tips.

BBQ Chicken Salad with Avocado Dressing

Up next is the salad that I made the creamy avocado dressing for, a hearty BBQ chicken salad that eats like a meal. With the warmer days here there is more time for grilling and throwing some grilled chicken onto a salad makes for some nice quick and easy summer meals. It has been a while since I have done anything with BBQ sauce and I had been craving the some of that tasty, sweet and spicy mixture! A BBQ chicken salad seemed like a great way to go and I was immediately thinking about building the salad up with some tomatoes, black beans and grilled corn from the cob. I was also initially thinking about adding diced avocado but I changed my mind and went with a fresh, creamy, guacamole like avocado dressing instead. The combination of the sweet and spicy BBQ chicken with the creamy avocado dressing was quit impressive and the rest of the salad did not disappoint either! I could easily see adding the diced avocado back into the salad along with the avocado dressing for the texture and even more avocado goodness!

With grilling season here I have been thinking about burgers a lot more and this idea for jalapeno popper burgers has been haunting my dreams all winter! The basic idea behind these burgers was to include all of the flavours of jalapeno poppers, which I am totally addicted to, and serve them up in burger form. Jalapeno poppers are jalapenos that are stuffed with cream cheese and/or cheddar that are coated in bread crumbs and fried until crispy and golden brown. Stuffing the burgers with cream cheese seemed like the natural place to start but that left the question about how to incorporate the jalapenos. I was thinking about mixing them right into the cream cheese but raw jalapenos are crispier than I wanted so I decided to roast or grill them first to tenderize them and add a nice smokiness.

Chicken Souvlaki Salad

Continuing with the themes of both salads and grilling is this chicken souvlaki salad that was inspired by Gina's recent Mediterranean chicken kebab salad. I am a big fan of all kinds of skewered and grilled meats from around the world but Greek souvlaki has to be one of my favourites! There is just something irresistible about char grilled meat on a stick and I knew that you could not go wrong turning it into a nice light summer meal by placing some in a salad. The first thing that I did was dust off my trusty chicken souvlaki recipe which calls for marinating the chicken in a garlic, lemon, yogurt and oregano
mixture before grilling it to impart it with a ton of flavour. The salad is a simple one consisting of a base of lettuce, tomato, cucumber and red onions along with some Mediterranean flavours including kalamata olives, crumbled feta and a tzatziki dressing.

Two weeks ago I had the opportunity to attend a fun filled couple of days in Monterey California for a summit put on by Dole where we learned more about where our salads come from and how they make to our tables. While we were there we got to eat some tasty food including a lot of salads which got me thinking about salads. As luck would have it May is also the National Salad Month so it was about time that I got down to making some salads!
