Homemade Fish Rolls (自制鱼卷) by Michelle Heng



Ingredients (makes 60-80 pcs)200g yellowtail (黄尾魚) fish meat
150ml water
1 tbsp egg white
1/2 tsp msg
1 tbsp salt

Fillings
Sichuan preserved mustard (optional)
Mushrooms (soaked)
Pork belly (blanched)
Chilli (deseeded)
Spring onion
Carrots

Steps
1. Cut all the filling ingredients to about 5cm length and the thickness of a matchstick (except for pork belly which maybe a bit thicker), set aside.
2. Chop off the head of the fish and fillet the 2 sides. Use a spoon to scrap off fish meat from the bones then rest the fillet on the skin side and scrap the fish meat as well.
3. Blend the fish meat and water together to form a smooth paste. Its ready when the fish paste pressed between two fingers feels 'bouncy'.
4. Transfer the fish paste to a large metal baking pan, add egg white, msg and salt then mix well with hand.
5. After it is well combined, the paste will thickened. Then grab as much fish paste on the hand and throw hard onto the baking pan, repeat process no less than 50 times (the more the merrier, this act makes the fish paste more 'bouncy' ie 'QQ').
6. Put the fish paste into a piping mould and slowly pipe the paste onto a clean cutting board (with the lines facing up). Pipe each piece to be about 12 cm long. If don't have piping mould, spread thin layers (about 0.2 cm thickness) of fish paste into cutting board, smoothen the surface with a wet spoon back, then make lines using a striated rolling pin or fork, then cut to length. Cut the strip to be 3.5cm x 12cm if using second method by running a knife on the fish paste.
7. Use a knife to scrap the fish paste gingerly from the cutting board and place it on your wet palm with the lines facing the palm. When scraping, the strip will be 'compacted' hence has to cut at a broader 3.5cm initially.
8. Place all or different combination of the fillings onto the fish paste strip, about 2cm away from the starting end.
9. Wet your other fingers before folding the fish paste strip, make a 1.5 roll, ie overlap by another 50% more to prevent the strip from opening up, cut excess off from the strip using a knife. The excess is to be combined with the rest of the fish paste and used again.
10. Place the completed fish rolls onto plastic containers line with plastic bags for easy lifting subsequently. Repeat steps 6-9 till all the fish paste are done. Do not touch or adjust any of them after placement in the container as they will break.
11. Rest the fish rolls in room temperature for 2 hours then store in fridge for another 2 hours or when ready to cook.
12. When ready to cook in your desired style, transfer the fish rolls gingerly into the pot/pan, takes about 8-10mins to be cooked.

Notes
1. Another fish to use is smooth wolf herring (西刀魚), buy smaller size fish preferably about 3 fishes for a kg combined.
2. Different fish used will yield different texture.
3. If buy ready fish paste from market/supermarket, can start at step 6 but be ready for different result (I have yet to try).
4. To cook the fish rolls within 3 days.



Fish noodles by Michelle Heng

Ingredients

5. Put the fish paste into a piping bag or a pastic bag, cut off a small tip (depending on the size of noodles one wants to make, preferably the size of udon is good enough).
6. Pipe the fish paste just above the water level of a pot of salted water. Pipe slowly and continuously, try not to make short strands unless one wants to make fish paste bee tak bak. You can then break the long strand to your desired length just before cooking later.
7. Rest the pot of fish paste noodles in room temperature for 2 hours then store in fridge for another 2 hours or when ready to cook.
8. When ready to cook in your desired soup base, transfer the fish paste noodles gingerly into the pot, once the soup boils, its ready to be served.
9. Bon appetit!

Thai Style Steam Fish 泰式蒸鱼 by Patricia Bakersiao‎


Ingredients
1) 1 Fish (I used Seabass) cut few slices on the fish.
2) chopped parsley n slices lime for garnish

Sauce for the Fish 1) 3 tbsp Fish sauce (鱼露)
2) 3 tbsp Garlics (finely chopped)
3) 4 tbsp Lime Juice (青柠檬)
4) 2 tbsp Sugar
5) 1 tbsp Chilli (cut into pcs. If u like spicy. Can add more chilli)
(Mixed well n set aside)

Method
1) place the Fish on a plate. Top with few slices of ginger. Sprinkle a bit of Salt n Hua Tiao Chiew just before Steaming.
2) When water boiling, place in the Fish n steam for 10 mins. When Done, remove the fish from steamer. discard the gingers n water.
3) Pour the sauce over the Fish n garnish with parsley n lime. Serve.


Baked chilli Stingray by Jeannie Lee



Seasoned with a little salt on the stingray for 2 hours. Before bake, I spread the sambal chilli evenly on the fish. Squeeze some lemon juice on it and put to bake. Temp 200deg C for 30mins.
Squeeze some lemon juice before you eat.


Sweet & Sour Fish 酸甜老鼠斑 by Helga Soo


Ingredients800g Fish
Some Spring Onions
5 slices of Ginger
3 small Tomatoes
1 tablespoon of Minced Garlics

Sauce
2 tablespoons of Ketchup
1 tablespoon of Dark Caramel Soy Sauce
1 teaspoon of Vinegar
1 tablespoon of Sesame Oil
1 tablespoon of Hua Teow Wine
1 tablespoon of Sugar
1 teaspoon of Corn Starch
Dashes of Pepper
350ml Water

Method
1) Season Fish with some Salt and Pepper, coat Fish with Corn Starch and fry till 80% cooked. Set aside.
2) Heat oil and add Ginger to stir fry for awhile then add Minced Garlics, Tomatoes and Spring Onions and continue to stir fry till fragrant. Pour Sauce and let it boil then add in Fried Fish. Cover and let it simmer for 20 mins. Dish up and serve.

Ingredient ( for 4 servings)
1. Fish fillet( any white fish ) 250 g
2. Lime leaves 2 pcs ( chop finely)
3. Candle nut 3
4. Egg 1
5. Thick fresh coconut milk 100ml
6. Corn flour 2tsp
7. Blue ginger 2cm
8. Turmeric 2 cm
9. Chili powder 2tsp
10. Salt and sugar to taste
11. Banana leaves 10 pcs ( 4 inches x 6 inches)


Method

  1. Place all the ingredients into food processor except fish, egg and coconut milk.
  2. Chop the fish fillet into paste, make sure no bone. ( unless ur hubby is nasty, you want to choke him) 
  3. Put the chili mixture into a bowl, crack the egg and mix together with coconut milk.
  4. Scoop the paste into centre of the banana leave and use staples or toothpicks to secure it. 
  5. Heat the pan, and grill it! 


Sea Bass in Three Flavours by Masneah Masrupi



Corn flour
Oil for frying
Clean the fish and coat it with the corn flour and deep fry it. Put aside.
2 onions (diced)
6 garlic (bashed)
10 bird’s eye chillies (I substituted with green and red chillies)
1 in ginger (julienne)
1 tomato
½ capsicum
I added some fresh mushrooms
Canned pineapple (I used fresh pineapple) – cubed
4 tbsp tomato sauce
4 tbsp thai chilli sauce (I substituted with chilli paste)
2 tbsp oyster sauce
2 tbsp fish sauce (I substituted with plum sauce)
Sugar to taste.

Saute the onions, garlic and ginger.
Add in the chilli paste. When it is done, add all the other sauces. Add some water and simmer. Add in the pineapple cubes and simmer again.
Add in the capsicum then the mushrooms.
Add in the sliced tomatoes, green and red chillies.
Pour the sauce over the fried fish. Garnish with coriander leaves.
**Note: The original recipe calls for lemon grass, kafir lime leaves and Chinese parsley. I omitted these. For the Chinese parsley, I substituted it with coriander leaves.

Steamed Sea bass and top with lime, garlic and coriander sauce by Anna Teo



Season fish with salt and few slices of ginger. Please keep the gravy of the steamed fish, it adds favour to the lime sauce.

Method 1
Sauce:
2 tbsp fish sauce
2 lime into juice
2 tsp sugar
3-4 clove garlic chopped finely
2 chili padi chopped
1 red chili chopped

Mix all ingredients well till sugar dissolve. Pour on cooked hot fish. Garnish with a bunch of chopped coriander. Serve hot!

Method 2Sauce:
You may want to boil the sauce with 1/4 cup water and few stripe of white cabbage on a low heat for 8 mins. Top on ready steamed fish and garnish with chopped coriander.



Toman fillet with scallion by Anna Teo



Ingredients
300g Toman Fillet (sliced)
2-inch young ginger (skin peeled and cut into thin stripes)
2 stalks scallion (cut into 5cm)
1 1/2 tablespoons oil
1 tbsp hua tiow chew

Sauce
Chicken concentrated essence
1 teaspoon sugar
1/4 teaspoon sesame oil
4 tablespoons water
3 dashes white pepper powder
1 tbsp wolfberry

Marinade
1 tsp corn starch/ flour
1 tbsp oil
1 tsp hua tiow chew


Method

Marinate the fish for at least 10 minutes or can be longer.
Mix the sauce ingredients in a small bowl and set aside.

1. Heat up the wok with cooking oil. Add ginger stripes into the wok when the oil is very hot. Stir-fry the ginger until fragrant.
2. Add in the sliced fish fillet. Stir-fry the fish until they are half cooked. Add in the sauce and continue to stir-fry until the fish is cooked or you will noticed the fillets turn whitish.
3. Add some little water if necessary.
4. Toss in the scallions and quick stir, 1 more splash of hua tiow chew.
5. Dish out , ready to serve.


Stir fried sambal belacan salmon with bean sprouts by Emy Lee


Ingredients

1 x salmon [400g] (washed, dried and cut into pcs or 1.5" cubes)
1 pkt x beansprouts
2 x purple onions (cut into pcs)

Seasoning
- 3 tbsp Soup restaurant bottled sambal belacan
- sugar to taste
- 2 tbsp water
- fish sauce (optional)
- pepper to taste
- oil for cooking

Method

1. Heat wok, add oil. Add in the cut onions & cook to soften.

2. Put onions aside, add in salmon pcs. Pan fry until cooked (try not to stir too vigorously or the fish will flake). Get some browning on your salmon.

3. Add the beansprouts. Spoon in your sambal belacan sauce; followed by sugar. Add water.

4. Finish by adding pepper and fish sauce. By now, your onions would have softened

Serve! Happy eating!
