Fish noodles by Michelle Heng

Ingredients
200g yellowtail (黄尾魚) fish meat
200ml water
2 tbsp egg white
1 tsp msg
1 tbsp salt
Salted water

Steps
1. Chop off the head of the fish and fillet the 2 sides. Use a spoon to scrap off fish meat from the bones then rest the fillet on the skin side and scrap the fish meat as well.
2. Blend the fish meat and water together to form a smooth paste. Its ready when the fish paste pressed between two fingers feels 'bouncy'.
3. Transfer the fish paste to a large metal baking pan, add egg white, msg and salt then mix well with hand.
4. After it is well combined, the paste will thickened. Then grab as much fish paste on the hand and throw hard onto the baking pan, repeat process no less than 50 times (the more the merrier, this act makes the fish paste more 'bouncy' ie 'QQ').
5. Put the fish paste into a piping bag or a pastic bag, cut off a small tip (depending on the size of noodles one wants to make, preferably the size of udon is good enough).
6. Pipe the fish paste just above the water level of a pot of salted water. Pipe slowly and continuously, try not to make short strands unless one wants to make fish paste bee tak bak. You can then break the long strand to your desired length just before cooking later.
7. Rest the pot of fish paste noodles in room temperature for 2 hours then store in fridge for another 2 hours or when ready to cook.
8. When ready to cook in your desired soup base, transfer the fish paste noodles gingerly into the pot, once the soup boils, its ready to be served.
9. Bon appetit!

Notes
1. Another fish to use is smooth wolf herring (西刀魚), buy smaller size fish preferably about 3 fishes for a kg combined.
2. Different fish used will yield different texture.
3. If buy ready fish paste from market/supermarket, can start at step 5 but be ready for different result (I have yet to try).
4. To cook the noodles within 2 days.

Hokkien Char Hae Mee (福建炒虾面) by Taitai Kim



Prepare Soup base
Fried prawn heads and shells (grams) 1/2 kg (own preference can add more or slightly lesser)

2 big raw garlic
1.5 litre water
Sheng siong half black pepper 40 粒 (semi ground)
Bring to boil (approx 25mins)

Filter soup and prawn heads put the soup aside


Prepare 2 Person servings ingredients:
1 packet /1 kg Thick white mee hoon

Half packet/500g Yellow noodles

1.5 -2 tablespoon chopped garlic

200grams pork belly (own preference) steam for 20min

2 eggs

150grams sotong (own preference)steam for 20min

100grams beansprout (own preference)

Some leek (fei cai)


Frying Process:
4 tablespoon cooking oil,fried garlic till bit light brown then add 2 eggs
Mix and stir fried the eggs into small pieces till frangrance

Put thick white mee hoon and yellow noodles fry for 1 min, after that add beansprout and fry for 1min

Add oyster sause and black sause and fry another 1-2 min

Add prawn soup est 500ml and fry for about 1min and cover it for further about 2 min for wet type and about 4 min for dry type

Add prawn and meat and fry for 1min and you are done

*fry in high heat through out the cooking

Seafood Mee Goreng by Amelia Renee Lim‎



IngredientsYellow mee ( round or flat) 1 packet - I use 3/4 packet
Tau geh 1 cup
Cai Xin
Fish cake
Seafood (shrimps/sotong/fish slice) Watever u like
Garlic 1tbs
Spring onion
Onion 1/2 cup (slice it)
Singlong Sambal chili 1tbs (like spicy add more)
Fish sauce 2tbs
Premium dark soya sauce 2tbs
Tomato sauce 1/2 cup
Water 3/4 cup (depends u like wet or not) adjust to ur liking
2 -3 eggs (own preference)
Tomato 1 whole ( wedges)


Method

Boil water to blanch e seafood few sec will do or slightly stir fry 3/4 cook set aside

Heat wok, add oil, add eggs, scramble it, add garlic & onion, add yellow noodle, Cai Xin & tau heh, add chili, tomato sauce & dark soya sauce, stir awhile, add tomato, seafood, fishcake or any liao u like in, add water stir abit then add fish sauce, before dish up add spring onion.

Ingredients
Crabs
Slices ginger
Cloves garlic, minced
Spring onion
Bee hoon

Stock
chicken stock
Oyster sauce
Salt
Sugar
Sesame oil
Ground white pepper
Chinese cooking wine

Directions
Prepare the crabs by pulling off the top shells and cleaning them. Cut off the pincers and cut the bodies.
Heat the oil and deep-fry the crabs for about one minute. Drain and set aside.
Heat three tablespoons of oil in a wok and add the ginger, garlic, spring onion and crabs, stir-frying until fragrant.
Add ingredients for stock and bring to the boil.
Add the bee hoon and stir-fry until the sauce is thick.

Ying yang noodles by Lena Lai


Sauté chopped garlic, add in the fish cakes, pork, prawns, stir fry awhile, add in few cups of chicken soup / water with 1/2 cube of chicken stock. Cook till it start to boil. Add in the vege, let it boil for awhile. Add salt n pepper. Now put in the tapioca mixture (6tbsp of tapioca n some Water) to thicken the gravy. Off the fire, pour the beaten eggs into the gravy n stir while u r pouring it. Done.



Vegetarian Mee Tai Bak by Mabel Tan



4 minced garlic
1 packet Mee tai bak
100 gram bean sprouts
Cabbage
Long beans
Vegetarian char Siew
Vegetarian meat
Vegetarian seasoning 2 tbsp
1 tbsp dark and sweet sauce
2 tbsp oyster sauces

Stir fried the long bean 1st. Put aside.
Rinse the Mee tai bak with hot water.
Stir fry the garlic, put in the mee and the rest of the ingredients.

Marinade for Pork belly
(I cut away the skin n the top fats for later use)
(Marinate for 30min)
Pinch of black pepper

1 tsp of premium dark soya sauce
1 tsp sesame oil
1 tsp of cornflour

Ingredients
10 white fish balls (cut halves)
4 cloves of garlic, finely chopped
1 pkt chye sim
1 pkt of yellow noodles

Seasoning
*Put into a bowl*
*3 tsp of premium dark soy sauce
2 tbsp of Thai fish sauce
1 tbsp of light soya sauce
1 tbsp of caramel sauce (to get the super dark colour
150ml of ikan bilis stock (pre boiled using ikan bilis)

Method
Preheat a wok (high flame) add about 1 tbsp of sesame oil.

Put in the pork belly skin n fry it til the skin turn brown.

Discard the skin n oil remain in wok.
Add garlic n saute.
Add the marinated pork belly and fry.
When turning brown, add the fishballs and fry for a minute. Add the vegetable and fry for a min.
Add the ikan bilis stock.
Add in the noodles and toss.
Put the choy sum.
Add the bowl of seasoning and mix to coat the noodles. Add more dark soy sauce if the colour isn’t dark enough.
Toss all the noodles to be coated in the gravy.



Fried Kway Teow Mee by Jenny Poon‎


Serve 2 - 4 person


Ingredients:
1 packet of kway teow (i used Kang Kang brand 420g)
1 packet of flat yellow noodles (i used Kang Kang brand 420g)
4 beaten eggs (slightly seasoned with fish sauce, pepper & sesame oil)
6 cloves of garlic (chopped)
6 small onion (sliced & slightly chopped)
5 pcs xi dao small fishcake (horizontally cut half and sliced) (i used Bobo brand)
1 packet green veggie about 200g - 250g (i used di wang cai)


Seasoning:
3 tbsp sweet soy sauce (i used ABC sweet soy sauce)
2 tbsp light soy sauce (i used Taihua Standard light soy sauce)
2 tbsp dark soy sauce (i used Tiger Top Quality dark soy sauce)
2 tbsp oyster sauce (i used Lee Kee Kum Panda Oyster Sauce)
1 tbsp sesame oil
1 tbsp fish sauce (I used Knife Reduced Salt fish sauce)
1 tsp pepper
1 tbsp water

Mixed the above seasoning together and set aside.


Directions:
1) Heat oil and fried the eggs till fragrant slightly browned. Set aside.
2) Heat oil stir fried the garlic and small onion till fragrant and slightly browned.
3) Add in fishcake and veggie, stir fried for 1 - 2 min.
4) Add in kway teow & flat yellow noodles and also the mixed seasoning, stir fried evenly for about 2 - 3 min. At the same time, add in the fried eggs.
5) Off heat, cover lid and leave it for 5 min before serve hot.




Fried Hor Fun by Jensie Tan


Ingredients
1 kg kway teow (big slice)
Chye sim, cut into inches
Fish cake, sliced
Prawn, deshell, marinated with corn starch
Squid, sliced, marinated with corn starch
Pork fillet, sliced, marinated with corn starch
Garlic, minced
Egg
Shallots oil

Seasoning
Cooking wine
Black soya sauce
White pepper
Fish sauce


Method

Fried Kway Teow
  1. Fry garlic until fragrant.
  2. Add kway teow.
  3. Add seasoning.
  4. Stir well and set aside.

Fried Hor Fun
  1. Using some shallots oil, fry pork and chye sim with some fish sauce.
  2. Add water.
  3. Add prawns, squid and fish cakes.
  4. Season to taste.
  5. Add egg and stir lightly.
  6. Add corn starch water and mix well.
  7. Serve over hor fun.

How to make Green Chilli
10 sliced green chili with 3 tbsp sugar and soaked with white vinegar (fully submerged) for three hours.

Char kway teow by Agnes Yue‎

Ingredients
2 tbsp garlic oil
4 gloves of minced garlic
1pkt kway teow 400g
teow (use hand to separate the kway teow in a colander and make a quick rinse and drip dry)
1 lup cheong sliced thinly
2 fish cake sliced thinly
1 pkt of organic bak choy
2 eggs

Sauce (combine in a small bowl)
2 tbsp dark soy sauce (brand is Po Po..Bot in Msia) or u can use premium dark soya sauce
3 to 4 tbsp kecap manis (sweet soy sauce)
1 tbsp fish sauce

*depends on ur kway teow qty, pls adjust to ur taste for the sauce*


Method
  1. Heat oil in wok. Crack 1 egg into pan, stir it n fry like omelette.
  2. Add 1 tbsp oil, add garlic n saute til fragrant.
  3. Add lup cheong and fish cake and stir fry til fragrant.
  4. Add kway teow n stir fry awhile (to ensure separation).
  5. Pour sauce over the kway teow and stir fry over high heat until the colour is even. Add bak choy, stir fry briefly, then pour 1 beaten egg over the kway teow. Stir fry until the egg is dry and evenly distributed.
  6. If hv cockles, Add cockles and cockles juice, stir fry for a further 10 seconds and serve immediately.

Crabs Bee Hoon Soup by Wendy Kwan‎


Ingredients
1kg crab, cleaned and cut into pieces
3 cubes fish stock (Knorr)
3.5 liter water
0.25-1 tsp salt
1.5 tbsp rice wine
150ml evaporated milk
80g melted unsalted butter
1-1.5 tbsp fish sauce to taste
1.5 inch ginger, peeled and slices
600g fresh rice vermicelli (Unicurd)
3 bunches of Shanghai bok choy
3 stalk of spring onion, cut into 1 inch lengths
Garnish with corianders leaf

Method
1. Boil 3.5 liter of water with the 3 cubes fish stock and set aside.
2. Boil the dried thick rice vermicelli for 3 mins with salt. Drain and set aside.
3. In heavy based pot, add the butter, ginger and garlic fry till fragrant.
4. Add the fish soup base, spring onion bring it to a boil.
5. Add the crab and evaporated milk to boil for a few minutes until the crabs turns red and cooked.
6. Add the Shanghai bok choy, rice wine and fish sauce to a quick boil.
7. Last add the rice vermicelli to boil for 1-2mins.
8. Ready to serve and garnish with coriander in a hot soup. Enjoy!
